All the classic cherry-chocolate pairing of Black Forest cake, reimagined as a bite-sized raw cup.

  • Medjool dates, pitted0.3 oz (8.5 g)
  • Cocoa powder, unsweetened0.12 oz (3.5 g)
  • Table salt0.01 oz (0.2 g)
  • Cashews, raw0.42 oz (12 g)
  • Sweet cherries, pitted0.56 oz (16 g)
  • Maple syrup0.21 oz (6 g)

Method

  1. Process walnuts, dates, half the cocoa powder, and salt until it forms a sticky crumb.
  2. Divide the mixture between as many silicone muffin or mini-cupcake mold sections as your chosen number of servings, forming cup shapes with a well in each center.
  3. Blend soaked, drained cashews with all the cherries listed for the filling, the remaining cocoa powder and maple syrup until smooth.
  4. Fill each cup with cherry cream and divide the additional pitted cherries listed for the centers among the cups.
  5. Freeze 1 hour until set, then pop out of the molds to serve.
