Raw Apple Pie
Thin-sliced fresh apples tossed in cinnamon-date caramel over a spiced walnut crust.

Method
- Process walnuts, three-quarters of the dates, half the cinnamon and the salt until a sticky crumb forms. Press into an 8-inch pie dish to form the crust.
- Blend the remaining quarter of the dates with the water from the ingredient list into a smooth caramel paste.
- Toss apple slices with lemon juice (to prevent browning), maple syrup, remaining cinnamon, nutmeg, and the date caramel.
- Arrange the coated apple slices in overlapping circles over the crust.
- Chill at least 2 hours to let the crust firm up and the apples soften slightly before serving.
