Method

  1. Process almonds, dates, and salt until they clump into a sticky crumb. Press into a 7-inch springform pan.
  2. Blend soaked cashews, lemon juice, coconut cream, maple syrup, and vanilla until silky smooth, scraping the blender sides as needed.
  3. Pour filling over the crust and smooth the top.
  4. Freeze at least 6 hours or overnight.
  5. Thaw 15 minutes before slicing.
