Method

  1. Process hazelnuts, dates, and salt until it forms a sticky crumb. Press into an 8-inch tart pan, working it up the sides.
  2. Whisk melted cacao butter, cocoa powder, maple syrup, and vanilla together until glossy and smooth.
  3. Pour the chocolate filling into the crust and tilt the pan to smooth the surface evenly.
  4. Chill 3 hours until fully set.
  5. Sprinkle with flaky sea salt just before slicing and serving.
