Raw Classic Cheesecake
A walnut-date crust with a smooth lemon, cashew and coconut filling, set in the freezer.

- Medjool dates, pitted0.6 oz (17 g)
- Table salt0.01 oz (0.2 g)
- Cashews, raw1.3 oz (36 g)
- Lemon juice0.42 oz (12 g)
- Coconut cream, unsweetened0.42 oz (12 g)
- Maple syrup0.38 oz (11 g)
- Coconut oil0.24 oz (6.9 g)
- Vanilla extract0.01 oz (0.4 g)
Method
- Process walnuts, dates, and half the salt until the mixture clumps together. Press into the base of a lined 8-inch springform pan.
- Blend soaked cashews, lemon juice, coconut cream, maple syrup, coconut oil, vanilla, and remaining salt until completely smooth — this can take 3–4 minutes in a high-speed blender.
- Pour the filling over the crust and smooth the top with a spatula.
- Freeze 6 hours or overnight until fully set.
- Thaw 15–20 minutes at room temperature before slicing with a warm knife.
