Method

  1. Process walnuts, dates, and salt until it forms a sticky crumb. Press into a parchment-lined 8x8-inch pan.
  2. Blend soaked cashews, lemon juice, lemon zest, maple syrup, and coconut oil until completely smooth and pale yellow.
  3. Pour the filling over the crust and smooth the top.
  4. Freeze at least 4 hours until firm.
  5. Slice into your chosen number of bars; thaw 10 minutes before serving.
