Raw Pecan Pie

A sticky date-caramel pecan filling over a crisp pecan crust, no corn syrup required.

  • Medjool dates, pitted1.1 oz (31 g)
  • Table salt0.01 oz (0.2 g)
  • Maple syrup0.26 oz (7.5 g)
  • Vanilla extract0.02 oz (0.5 g)
  • Almond milk, unsweetened0.13 oz (3.8 g)

Method

  1. Process half the pecans with half the dates and the salt until a sticky crumb forms. Press into an 8-inch pie dish.
  2. Blend the remaining half of the dates with maple syrup, vanilla and almond milk until a thick, smooth caramel forms.
  3. Roughly chop the remaining half of the pecans and fold into the date caramel.
  4. Spread the pecan-caramel mixture evenly over the crust.
  5. Chill 2 hours until set before slicing.
