Pumpkin Cashew Pie

A chilled pecan-date crust with a smooth pumpkin, cashew and warm-spice filling. Use cooked, cooled pumpkin puree.

  • Pumpkin, canned, no salt1.1 oz (31 g)
  • Maple syrup0.47 oz (13 g)
  • Pumpkin pie spice0.02 oz (0.5 g)
  • Coconut oil0.12 oz (3.5 g)

Method

  1. Process pecans, dates, and salt until it forms a sticky crumb. Press into an 8-inch pie dish.
  2. Blend soaked cashews, pumpkin puree, maple syrup, pumpkin pie spice, and coconut oil until completely smooth.
  3. Pour the filling over the crust and smooth the top.
  4. Freeze at least 4 hours until firm.
  5. Thaw 15 minutes before slicing.
