Method

  1. Process macadamias, shredded coconut, dates, and salt until it forms a sticky crumb. Press into an 8-inch springform pan lined with parchment.
  2. Blend cashews, lime juice, maple syrup, coconut oil, and vanilla until silky smooth.
  3. Pour filling over the crust, tap the pan gently on the counter to release air bubbles, and smooth the top.
  4. Freeze at least 6 hours, ideally overnight.
  5. Thaw 15 minutes before slicing for the cleanest cuts.
